Today’s recipe combines two fall greats, the zucchini and baked casseroles, into one warm, hearty, scrumptious dinner. Using our Freeze Dried Zucchini, we’ve found an awesome way to utilize this autumn veggie in more than just cake bread or cookies! Grab your fork, it’s time to try Zucchini Casserole!
Ingredients:
3 cups Honeyville Freeze Dried Zucchini
1 cup Honeyville Shoestring Carrots
1/2 cup Honeyville Freeze Dried Onion
1/2 cup (1 stick) Butter
1 cup Sour Cream
1 can Cream of Mushroom Soup
8 oz Seasoned Stuffing
Directions:
Preheat oven to 350 degrees.
Re-hydrate your zucchini by soaking it in water, then draining any excess liquid.
In a large skillet, melt butter.
Once butter is melted, add carrots and onions and saute until they are completely hydrated with the butter.
Remove from heat and add sour cream and cream of mushroom soup, stirring until completely combined.
Add zucchini and half of the stuffing, and stir until completely combined.
In a 3 qt. baking dish, pour mixture and smooth out until even with a spatula.
Sprinkle remaining seasoning on top.
Bake at 350 degrees for 35 minutes. Remove, scoop out, and serve!
