I’ve mentioned it before but rice usually makes it to our dinner plates a couple of times of week.  Sometimes it is nice to change it a little bit so it has a little bit more pizazz.  Enter Vegetable Rice….


Ingredients:
2 and 1/4 cup Water
1 cup Honeyville Long Grain White Rice
3 Tbsp Honeyville Freeze Dried Celery
2 Tbsp Honeyville Freeze Dried Onion
2 Tbsp Honeyville Dehydrated Carrots
2 Chicken Bouillon Cubes (or 1 tsp Shirley J’s Chicken Bouillon)
1 tsp Dried Parsley Flakes
Salt and Pepper to taste

Directions:
Add Rice, Water, Carrots and Bouillon to a medium size pot.  Bring to a boil, stirring occasionally.  Once boiling, stir in Celery, Onions and Parsley.  Cover, reduce heat and simmer for 18-20 minutes until rice is done.  Fluff with a fork.  Season with Salt and Pepper to taste.

Easy right?  I mean if you can measure and boil water you’re good to go.  Another bonus to this dish is you get to sneak in a few veggies too. Feel free to add more veggies or play with the veggie variety.  I really like Broccoli and Rice together so maybe next time I’ll try adding that to the combination.
