For me, there’s nothing better than an over-the-top, lip smacking salad on a warm summer day. The crisp taste of the vegetables. The creaminess of the dressing. Just thinking about it now makes my mouth water and my stomach start growling.
Salads are all about fresh, healthy ingredients, and today’s recipe has just that! Combining our amazing, easy-to-use Dehydrated Shoestring Carrots with our all new Freeze Dried Organic Pineapple, we’ve created the perfect summer salad for any barbecue, family reunion, neighborhood block party, or typical Sunday dinner. One taste and you’ll agree, this is what salads are all about! Get your tossing tongs ready, we’re making Tropical Carrot Salad!
Ingredients:
4 cups Honeyville Dehydrated Shoestring Carrots
1 cup Honeyville Freeze Dried Organic Pineapple
1/2 cup Unsweetened Coconut Flakes
1/2 cup Chopped Macadamia Nuts
2/3 cup Raisins
Dressing:
Juice of 1 Lime
1 Tbsp Dijon Mustard
1 Tbsp Raw Honey
2 Tbsps Mayonnaise
1/2 cup Olive Oil
Directions:
First, re-hydrate your ingredients.
To do so, soak your carrots and pineapple separately in bowls of water until soft, then drain any excess water.
In a large bowl, combine carrots, pineapple, coconut flakes, nuts, and raisins, and toss together until fully combined.
In a medium bowl, whisk together dressing ingredients until completely combined.
Drizzle dressing over top of salad, then toss together until evenly coated. Serve cold.
