Stuffed Pancake Bites

Believe it or not, Back-to-School time is almost here, and you know what that means. School supply runs, carpools, early mornings, and, of course, quick breakfasts!

Yes, it seems like school season always brings on the simple, yet un-flavorful, easy breakfast dishes such as burnt toast, cold cereal, and stale microwavable waffles. Believe me, I get it. There just isn’t enough time in the morning for a warm, home-cooked meal. Plus, nothing’s easier than grabbing a toaster pastry on the way out the door, right?

What if I told you there’s a simple, easy-to-create breakfast meal that’s not only delicious but takes only minutes to bake? Don’t believe me? Ingredients:
2 cups Honeyville Buttermilk Pancake Mix
1 1/2 cups Water

Stuffing:
1/2 cup Honeyville Freeze Dried Sausage
3 oz Cream Cheese
1/4 cup Chocolate Chips

Directions:
Preheat oven to 350 degrees.

Pancake Batter

In a large bowl, whisk together pancake mix and water until a slightly runny batter forms.

Pancake Batter in Muffin Tin

In a greased muffin tray, pour the batter into each cup about 3/4 the way full.

Re-Hydrated Sausage

Re-hydrate sausage by soaking in water until soft, then draining any excess liquid.

Sausage in Batter

Using a tablespoon spoon sausage into six of the cups.

Chocolate Chips in Batter

In the remaining cups, place a slice of cream cheese and a few chocolate chips.

Bake at 350 degrees for 20 minutes, or until bites are fluffy with just a hint of golden brown on top.

Remove and allow to cool on a wire rack, then serve.
