Strawberry Lemonade. Those two little words, when heard, immediately make us think of warm summer nights, picnics in the park, and summertime baseball. Truthfully, when it comes to official drinks of summer, Strawberry Lemonade would be the king!
So imagine taking all the flavor that we love about Strawberry Lemonade and baking it into a delicious treat. Oh the joy! Oh the excitement! Our taste buds can hardly contain themselves!
Today’s recipe takes everything we love about cake box cookies, along with the sweet aroma and flavor we adore in Strawberry Lemonade, and bakes them both together into one delicious cookie sandwich! Could summertime get any better?! I think not. Say hello to Strawberry Lemonade Cake Cookies!
Ingredients (Cookies):
3 cups Honeyville Yellow White Cake Mix
1/2 cup Shortening
2 Eggs
2 Tbsp Lemon Juice
(Strawberry Frosting):
3/4 cup Butter, softened
1 cup Honeyville Freeze Dried Strawberries, crushed
1 tsp Vanilla
2 cups Powdered Sugar
1 Tbsp Heavy Cream
Directions:
Preheat oven to 350 degrees.
In a large bowl with your electric hand mixer, mix together cake mix, shortening, eggs, and lemon juice, until a thick dough forms.
On your USA Pan Cookie Sheet, lined with parchment paper, place rolled dough balls, about half the size of golf balls.
Bake at 350 degrees for 10-15 minutes. Remove and allow to cool on a wire rack.
While cookies are cooling, make frosting by first crushing strawberries (to do so, place strawberries in a resealable bag and roll over with a rolling pin until strawberries are in a powder form) then place strawberries, butter, vanilla, powdered sugar, and heavy cream in a mixing bowl and whisk with an electric hand mixer until a smooth frosting forms.
Frost the bottom of one cookie, place another cookie on the frosting, and voilà, you have a Strawberry Lemonade Cake Cookie!
These cookies are packed full of flavor and texture. The cookie itself has the perfect crisp, yet soft texture with the right amount of flavor from the cake mix and the perfect hint of lemony goodness!
