Don’t you just love the basics? When it comes to delicious meals and treats, there’s nothing better than simple, traditional dishes. Whether it’s meat and potatoes, bacon and eggs, or cake and ice cream, the simple, easy-to-make combinations always seem to have a lasting impression on our souls and make any meal time or celebration just a little bit brighter.
For me, one of those basic dishes that always brings a smile to my face is peanut butter and jelly. There’s just something about that rich, nutty spread, combined with the sweet, fruity taste, smashed between to slices of fluffy bread that gets me giddy and sends my mind back to those days of bicycles and trips to the park!
Today, I wanted to take this traditional dish we love and create the perfect springtime dessert, with just a little twist. Using our versatile Organic Peanut Butter Powder, and a few of our Freeze Dried Strawberries, I’ve come up with a delicious, mouth watering muffin recipe that is sure to transform even the grumpiest adult into a child. Grab your favorite apron, it’s time for Strawberry Cream Peanut Butter Muffins!
Ingredients:
1 1/2 tsp Baking Powder
Pinch of Salt
1 Tbsp Water
2 Tbsp Coconut Oil
3 Tbsp Raw Honey
1 cup Almond Milk
Strawberry Cream Frosting:
3/4 cup Butter, softened
1 cup Honeyville Freeze Dried Strawberries, ground into a powder
3 cups Powdered Sugar
2 cups Heavy Cream
Yields: 12 muffins
Directions:
Preheat oven to 350 degrees.
In a medium bowl, whisk together flour, baking powder, and salt.
In a separate bowl, combined peanut butter powder, water, and coconut oil. Mix until fully combined.
Add milk and honey and mix together. Add flour and mix until a thick batter forms.
Line your USA Pan Muffin Pan with muffin cups, then pour batter into cups, about 3/4 the way full for each cup.
Bake at 350 degrees for 12 minutes. Remove and let cool in the pan for 10 minutes.
Once cooled, remove from pan and, using your Wüsthof Pairing Knife, cut a cup shape in each muffin.
Next, make your frosting by combining butter, crushed strawberries, powdered sugar, and heavy cream together in a bowl and whisking with an electric hand mixer until a thick batter forms.
Place batter in a piping bag and pipe in cup of muffin and around the top. Serve.
