I love strawberries, don’t you? These delicious, sweet, red-colored delights always bring a smile to my face. Whether it’s piled atop a slice of strawberry shortcake, blended into the perfect tropical smoothie, or even simmered down into a mouth-watering jam or jelly, nothing beats the taste of strawberries.
With summer just around the corner, I seemed only right to find the perfect recipe using strawberries. Even better, thanks to our tantalizing Freeze Dried Strawberries, you could literally bake up this delicious treat any time of the year! Believe me, one bite and you’ll be baking up this recipe as often as you can. Set your taste buds to stun, it’s time for some Strawberry Bread!
1 1/2 cups Honeyville Alta Artisan Flour
1 cup Sugar
2 tsp Baking Powder
1/2 tsp Salt
1/2 tsp Vanilla
1 cup Greek Yogurt (plain)
1/2 cup Vegetable Oil
Yields: 1 loaf
Preheat oven to 350 degrees.
In a bowl combine sugar, eggs, vanilla, vegetable oil, and greek yogurt, and mix until smooth. Add flour, baking powder, and salt, and mix until a thick batter forms.
Re-hydrate strawberries by soaking in water until soft, then draining excess liquid.
Gently fold strawberries into batter until fully combined.
In your USA Pan Small Loaf Pan, pour entire batter.
Bake in oven at 350 degrees for 60-70 minutes, or until a toothpick comes out of the center clean (if the top begins to brown quickly, cover with foil.
Allow to cool 10 minutes in pan, then turn out on wire rack and let cool for an additional 20 minutes before slicing and serving.
This bread bakes up sweet, savory, and with the perfect combination of strawberries and cake-like bread. Similar to a pound cake, the taste and texture is exactly what you were hoping for in a dessert or snack.
