So what do you do when your schedule doesn’t allow for oatmeal? What do you do when you’re simply too busy in the morning for a warm bowl of delicious goodness? Simple, you bake it the night before.

Using our amazing, heart healthy Regular Rolled Oats, and with a little help from our Freeze Dried Strawberries and Bananas, we’ve created the perfect, hand-held, bake-the-night-before dish that gives you all that healthy satisfaction you’ve come to love in oatmeal, without the extended cook time each morning. Get ready, it’s time to enjoy some Strawberry Banana Baked Oatmeal!

Ingredients:
1 1/2 cups Honeyville Regular Rolled Oats
1/2 cup Unsweetened Coconut
1 cup Honeyville Freeze Dried Strawberries
1 cup Honeyville Freeze Dried Bananas
1/4 cup Pure Maple Syrup
2 Tbsp Coconut Oil
3 Tbsp Almond Milk

Yields: 6-8 oatmeal bites

Directions:
Preheat oven to 350 degrees.

In a large bowl, combine oats, strawberries, and coconut, and mix together.

In a separate bowl, re-hydrate bananas by soaking in water until soft, then draining excess liquid. Mash up soft bananas and combine with maple syrup, coconut oil, and almond milk, and mix together.

Add wet ingredients to dry ingredients and mix together until a sticky batter forms.

In your USA Pan Muffin Pan, scoop batter evenly into muffin cups. Fill cups to the top and gently press down on each top.

Bake at 350 degrees for 20 minutes. Remove and allow to cool on a wire rack before serving.
