Is there any better combination than cinnamon and sugar? Sweet, rich, and oh so flavorful, these delicious ingredients were for certain made for each other. No matter what the dessert or treat, when we hear the phrase “cinnamon and sugar” our ears perk up and our taste buds go wild!
Today’s recipe is the perfect example of that. Snickerdoodle cookies in and of themselves are a warm, buttery, cinnamon and sugar-infused treat that we all love and cherish. But take that same taste, aroma, and mouth-watering goodness and bake it up into a delicious, mini bundt cake? Well, now you’ve got my attention, and I think I have yours too! Grab your apron and a spoon for licking, it’s time to bake up some Snickerdoodle Mini Bundt Cakes!
3 cups Honeyville Alta Artisan Flour
1 Tbsp Baking Powder
1 tsp Himalayan Salt
1 tsp Nutmeg
1 cup Butter, softened
2 cups Sugar
1 tsp Vanilla
1 1/4 cup Milk
8 Tbsp Butter, melted
1 cup Sugar
1 tsp Cinnamon
Yields: 6 mini bundt cakes
Preheat oven to 325 degrees.
In a large bowl, combine flour, baking powder, salt, and nutmeg, and whisk together.
In a separate bowl, ad butter and sugar and beat together with an electric hand mixer until light and fluffy. Add eggs and vanilla and continue to beat until fully combined.
Add flour mixture and milk to butter and beat together until a thick, soft batter forms.
In your USA Pan Swirl Cupcake Pan, drop batter into each cup (You should have enough for 6 mini bundt cakes and 1 regular 8 inch circle cake).
Bake at 25 degrees for 20-30 minutes.
While cake is baking, whisk together 1 cup of sugar and 1 tsp of cinnamon. Also, melt 8 Tbsp of butter in a separate bowl.
Once cakes are done baking, remove from pan on to a wire rack.
Take each bundt and dip in melted butter, then roll in cinnamon/sugar mixture. Let dry on wire rack before serving.
