What’s the key to a perfect side dish? Is it the way the flavor and texture stack up to and compliment the main dish it’s served with? Is it the ability the dish has to stand on it’s own, making it ideal with any entree, or even perfect just by itself? Or, perhaps, it’s something more.

I spent a few years of my life in the great state of Texas. While there, I fell in love with a barbecue joint known throughout central Texas. Mis-titled “The Worst Barbecue in Texas,” this place was anything but that. Not only was the brisket, pork, turkey, and links absolutely, mouth-watering amazing, but when combined with a certain side dish, these barbecue classics would take on a whole new level of deliciousness. That side dish was cream corn.

Just a few days ago I came across a recipe that had all the flavor, texture, aroma, and lip smacking tastiness that this Texas barbecue side dish had. With each bite my mind was flashed back to longhorns, rolling Texas hill country, and the smokey smell of Texas oak, slow burning in an iron smoker. Best of all, this whole dish was made with our amazing Freeze Dried Sweet Corn and baked up in our Fagor Pressure Cooker. You know you can’t beat that! Get ready for the ultimate side dish, Slow Cooker Cream Corn!

Ingredients:
5 cups Honeyville Freeze Dried Sweet Corn
3 cups Heavy Cream
1/2 cup (1 stick) Butter, cubed
8 oz Cream Cheese, cubed
1 Tbsp Sugar
1/2 tsp Salt
3/4 tsp Black Pepper

Directions:
First, prepare your ingredients.

Taking your cold butter and cream cheese, cube them up using your Wüsthof Paring Knife.

In your Fagor Pressure Cooker, add corn, heavy cream, cubed butter and cream cheese, sugar, salt, and black pepper. Lock on lid (make sure valve is set to “steam”) and push slow cooker “low” button until you see a #2. That means that it’s cooking for 2 hours. Let it cook, stirring it occasionally every 30 minutes or so.

Once done cooking, remove lid, stir once more, then serve.

Get ready for a flavor explosion not expected with a typical side dish.
