Have you noticed a Southwestern theme occuring this week on the blog? Well I thought I’d continue that theme with my recipe today.
One of the things I remember most about summertime were Friday nights. In my family, Friday night was always pizza night. This meant that mom would get a much needed break in the kitchen while dad picked up a couple of pies from our local pizza joint. Well now that I’ve grown older and have a family of my own, I’ve found a fun way to still have pizza night without breaking the bank at the local pizza delivery place. Unlike the typical pepperoni and cheese, this pizza has a southwestern kick that can only be brought to you by Honeyville. Here are the ingredients to get you started:
1 cup Honeyville Freeze Dried Corn
1 cup Honeyville Freeze Dried Bell Peppers
1 cup Honeyville Freeze Dried White Chicken
1 cup prepared Honeyville QuickCook Black Beans
½ cup Salsa
½ cup tomato sauce
1 cup Honeyville Freeze Dried Monterey Jack Cheese
Focaccia loaf, Pita Bread, Pizza Bread dough or English Muffin (your choice)
3 tablespoons olive oil mixed with crushed garlic
1/2 tsp of Chef Tess Southwest Fajita Seasoning
First off, the most exciting part of this meal is choosing how you’ll make your pizza. You can use regular pizza dough, warmed large tortillas, pita bread, or even English muffin’s for individual pizza’s. For our recipe, we’ll be using a focaccia loaf to make our small pizza. The greatest thing about making pizza is the chance to include the whole family in the process and having each person put as much or as little of the ingredients on as they’d like.
First, start with the focaccia bread. Lightly spread the oil mixed with crushed garlic on top of the bread. Then, add your salsa and tomato sauce. You want to mix the two sauces evenly before spreading over the bread. Be as generous as you like with this. Add some diced cilantro, beans, corn, bell peppers, and chicken on the pizza. This is where you can get a bit creative and add as much or as little amount of toppings as you’d like. Top it all off with the Freeze Dried Monterey Jack Cheese and just a bit more cilantro on top for flavor and décor. Put
in the oven at 350 degrees for 8-10 minutes, just long enough to melt the cheese and heat up the ingredients, then serve.
Serve as a pizza for the whole family if using regular pizza dough, a pizza built for two when using the focaccia or pita bread, or even individual pizza’s that each member of the family can create on english muffins. The choices are endless, and with the help of the Honeyville Freeze dried corn, bell peppers, quick cook black beans, Freeze Dried Chicken, and Chef Tess’ Fajita seasoning, the taste is a true southwestern delight!
