I love root beer floats, don’t you? That creamy, frothy soda, poured over the top of sweet vanilla ice cream always takes me back to my fondest childhood memories. Simple, easy-to-make, and extremely delicious, there really isn’t a better treat as a kid, or those of us that are young at heart.
Now, imagine taking all that taste and texture we love about Root Beer Floats and baking it up into a light, fluffy cupcake. Think about it, you’ve got everything you love about this tried-and-true classic, baked into the perfect, hand-held cake! Can you really pass that up? Yeah, we didn’t think so! Grab a mixing spoon, it’s time to make some Root Beer Float Cupcakes!
10 Tbsp Butter, melted
8 tsp Honeyville Powdered Egg Whites + 8 Tbsp Water (or 4 Egg Whites)
1 1/4 cup Milk
1 Tbsp Root Beer Flavor
1 tsp Root Beer Flavor
6 oz Water
Yields: 24 cupcakes
Preheat oven to 350 degrees.
In a large bowl, combine cake mix, butter, egg whites, milk, and root beer flavor, and mix with an electric hand mixer until a smooth batter forms.
In cupcake pan lined with liners, pour batter into each cup, about 2/3 full. 
Bake at 350 for 18-20 minutes. Remove and let cool in the cupcake pan for a few minutes, then place on a wire rack.
While cupcakes are cooling, begin your frosting. In a medium bowl combine insta-whip, powdered sugar, root beer flavor, and water, and mix with an electric hand mixer until a smooth frosting forms.
Place frosting in a pastry bag and pipe it on top of the cupcakes. If you have small straws, you can add for decoration.
These cupcakes are not only super cool and unique in appearance, the taste is completely out of this world. Smooth, creamy, and full of everything you love about root beer, you won’t believe that a cupcake can taste as good as these do!
