I moved over the weekend (move number seven in nine years)! What better way to entice my moving help with a little dessert?! I wanted something light and sweet that could be eaten without a lot of fuss. These Raspberry Lemonade Mini Cakes were a HUGE hit. And honestly I had a hard time refraining from eating them all before the help arrived. This makes about 36 mini cupcakes.
Ingredients:
For the Cakes:
2 cups Honeyville Yellow White Cake Mix (sold online but can be special ordered at the retail stores)
2 scoops Honeyville Old Fashioned Lemonade Drink Mix
4 Tbsp. Honeyville Powdered Whole Eggs
1 cup Water
For the Glaze:
1 cup Powdered Sugar
2 Tbsp. finely crushed Honeyville Freeze Dried Raspberries
3 Tbsp. prepared Honeyville Old Fashioned Lemonade Drink Mix
Directions:
Begin by making the cakes first. In a medium bowl combine all the cake ingredients.
With an electric mixer, blend on medium speed for 3 minutes. Make sure you scrape down the sides so that everything gets incorporated.
Grease mini muffin tins. Add batter to muffin tins. I used a cookie scoop for a more consistent measuring guide and less mess!
Bake at 350 degrees for about 12 minutes or until done.
Let cool for about 10 minutes then carefully remove from pan. While the mini cakes are cooling make the glaze. In a small bowl combine all the glaze ingredients. Be sure to finely grind the freeze dried raspberries so you don’t get big bits of raspberry.
Stir to combine using a spoon or whisk. Mix until smooth.
To frost each cake dip the top of each cake into the glaze. Give a little twist, pull out, and turn the cake over. Transfer to a cooling rack to allow any extra glaze to run off. (A quick clean up tip I do is to place a sheet of wax paper underneath the rack to make drip clean up easy peasy!)
Repeat until all mini cakes are glazed.
EVERYONE loved these cakes! The kids begged for more. The adults wanted to know if I would hurry up and take pictures so they could sample them. I wanted to take them all and forget about packing and just eat these and watch a show. More than once I caught people eating a few and then trying to rearrange the tray as to not show exactly how much damaged had been done. I think you could easily change up the glaze flavor to suit your personal preference. It seems like at restaurants theses days you can order any fruit combination with your lemonade. Honeyville has several freeze dried fruits to choose from so go hog wild!
