I love sandwiches! They are definitely my go-to meal. Turkey, Ham, Peanut Butter, Jelly, or even ice cream. It doesn’t matter what’s in the middle, so long as there are two slices of bread, or cookies, on the outside.

I may be one of those few people who, if given the chance, would have a sandwich for every meal. Yes, you heard me correctly, EVERY meal! Breakfast, Lunch, Dinner, and even Dessert, and I know I’m not the only one out there that feels this way. That’s why I knew I had to share today’s recipe with our amazing Honeyville family. Really, all of you are family, and sandwiches are the perfect family meal, so this may be the perfect family dessert! Made with our delicious Freeze Dried Raspberries, easy-to-use Insta-Whip, and placed between two delicious cookies, this treat has everything you’ve come to love in both a sandwich and dessert! Best of all, the whole thing is frozen to perfection! Time to wipe the drool off your chin and start baking Raspberry Lemon Cream Cookie Sandwiches!

Ingredients (Cookie):
1 cup Honeyville All Purpose Flour
1/2 tsp Baking Powder
1/4 tsp Baking Soda
1/4 tsp Salt
1 stick Butter, softened
3/4 cup Brown Sugar
1 Egg
1/2 tsp Vanilla

(Raspberry Lemon Filling):
1 cup Honeyville Freeze Dried Raspberries
1 Lemon, zested
1 Lemon, juiced
2 cups Honeyville Insta-Whip + 2 cups Water

Preheat oven to 375 degrees.

Prepare two 8×8 baking pans by lining with foil, then spraying the foil with nonstick cooking spray.

In a medium bowl, combine flour, baking powder, baking soda, and salt, and whisk together.

In a separate bowl, mix brown sugar and butter together with an electric hand mixer until a brown cream texture forms.

Add egg, vanilla, and dry ingredients and mix until a soft batter forms.

Separate batter and fill each baking pan evenly. You’ll want a thin layer in each tin.

Bake at 375 degrees for 10-12 minutes. Remove and allow to cool for 30 minutes.

Place your freeze dried raspberries in a small sandwich bag, seal, and smash with a rolling pin until a rough powder forms.

Place powder, lemon juice and zest, and insta-whip in a large bowl. Add water and mix with an electric mixer until soft peaks begin to form. This may take some time, so be patient.

With a spatula, spread cream on top of one of the baked cookies.

Remove the other cookie from its pan and place on top of the cream-covered cookie.

Now, here’s the fun part. Place in the freezer for 2-3 hours.

Remove once frozen and slice up on a cutting board into sandwich shapes, then serve.
