Chocolate Chip Quinoa Cookies

So how do you improve on something so great as the traditional chocolate chip cookie? How do you take something you’ve loved your whole life and make it better? How do you make this all time favorite cookie healthy and tasty at the same time? Is it even possible? Believe it or not, it is, with the swap of one main ingredient. I’ve got one word for you: Quinoa.

That’s right, by swapping out traditional wheat flour with freshly ground organic quinoa flour, you can have all the delicious taste, texture, and aroma you’ve come to expect in chocolate chip cookies, but with a healthy, gluten-free twist! Too good to be true you say? It’s time to try it for yourself. It’s time to become a believer in Quinoa! It’s time for Quinoa Chocolate Chip Cookies!

2 cups Honeyville Organic Quinoa
1/2 cup Raw Honey
1/4 cup Coconut Oil
1/4 cup Applesauce
1 Egg
1 tsp Vanilla
1/2 tsp Salt
1 tsp Baking Soda
4 Tbsp Lemon Juice
2/3 cup Cacao Chips

Preheat oven to 350 degrees.

Quinoa Flour

Using your Nutrimill Electric Grain Mill, mill your quinoa into 2 cups of quinoa flour. Combine 2 cups quinoa flour with salt and baking soda in a medium bowl.

Quinoa Cookie Ingredients

In a large bowl, whisk together egg, honey, coconut oil, applesauce, vanilla, and lemon juice.

Quinoa Cookie Batter

Combine dry ingredients with wet ingredients and mix until a soft batter-like dough forms. Don’t worry if it’s a little sticky, it’s suppose to be. Fold in cacao chips.

Using a spoon, drop dough onto a baking sheet lined with parchment paper.

Baked Quinoa Cookies

Bake at 350 degrees for 10 minutes, or until tops are lightly golden. Remove and allow to cool before serving.
