Black beans are a super healthy, extremely tasty snack or side dish, that is packed full of all the fiber and protein you’re looking for in your diet. Alone, they are already a very healthy alternative to most dishes. But when combined with one of our favorite whole grains, our Organic Quinoa, these seemingly innocent beans take on a super healthy alter-ego! Plus, they just taste mouth-wateringly amazing! It’s time to bake up some Quinoa and Black Beans!
1/2 cup Honeyville Black Beans
1 1/2 cups Water
1 tsp Coconut Oil
1/2 cup Honeyville Freeze Dried Onions
3 cloves Garlic, chopped
3/4 cup Honeyville Organic Quinoa
2 cups Vegetable Broth
1 tsp Cumin
1/4 tsp Cayenne Pepper
1/4 tsp Salt
1/4 tsp Black Pepper
First, cook your beans. Using your Fagor Pressure Cooker, cook beans and water together on “High” pressure setting for 30 minutes. When done cooking, release pressure, drain any excess water, and place to the side.
Place a large sauce pan over medium heat. Add coconut oil, onions, and garlic, and cook just long enough for the garlic to begin to be lightly brown.
Add quinoa, vegetable brother, cumin, cayenne pepper, salt, and black pepper, stir together, and bring to a boil. Once boiling, cover, reduce heat, and let simmer for 20 minutes, or until quinoa has fully absorbed the liquid.
Once quinoa has absorbed all the liquid, stir in corn.
After corn is fully incorporated, stir in black beans, then serve.
