I just had an amazing lunch!!! Easy and quick to make, but refreshing and tasty!! I had it warm and also cold as leftovers the next day. We also tried it with rice and with quinoa- we voted the quinoa was better in this recipe, but you choose what your family will like and eat it as you please and enjoy this refreshing meal. The whole recipe just reminds me of Spring and since Spring is here, I think it is very fitting!
1 cup prepared Honeyville Quinoa (available at our Retail store locations) or Honeyville Long Grain White Rice
1 cup Water
1 cup peeled, cooked, deveined Shrimp
3 Tbps. Lemon Juice
3/4 tsp. Honey
1/2 tsp. Oregano
1/2 tsp. Kosher Salt
1/4 tsp. Pepper
1/4 cup Olive Oil (can be purchased at Honeyville Stores)
As the quinoa is simmering prepare the dressing by mixing all ingredients together. Then chop tomato and avocado. Once quinoa has been drained, mix together shrimp, tomato and avocado, pour in dressing and mix well. Scoop into lettuce leaves and enjoy every bite!
