Is December too late in the year for Pumpkin flavor? With Thanksgiving and Halloween officially over, many are turning there back on pumpkin-infused treats and dishes.
Well we here at Honeyville are saying there’s still some time left for these orange globed, spiced meals and desserts. Why should October and November have all the pumpkin fun? To show that you can still incorporate that Pumpkin pizzazz into a delicious December dish, we’ve whipped up an amazing casserole, perfect for any Holiday morning. And best of all, it’s full of pumpkin flavor! Prepare yourself, it’s time for Pumpkin French Toast Casserole!
Ingredients:
3/4 cup Milk
1/2 cup Pumpkin Puree
3 Eggs
2 tsp Pumpkin Pie Spice
1 tsp Vanilla
1 loaf Sandwich Bread
Cream Cheese Filling:
8 oz Cream Cheese, softened
1/3 cup Powdered Sugar
1/4 tsp Cinnamon
Crumb Topping:
1/4 cup Honeyville Alta Artisan Flour
1/4 cup Brown Sugar
1/2 tsp Cinnamon
1/4 cup Butter, cut into cubes
1/4 cup Chopped Pecans
Directions:
First, prepare your bread. You’ll need to start one day before.
Using our Sandwich Bread recipe, bake up a loaf of bread, then let it sit out for a day. Slice it up, then cube the bread.
In a greased 9×13 pan, place a layer of cubed bread pieces.
In a separate bowl, combine milk, pumpkin puree, eggs, pumpkin pie spice, and vanilla, and whisk together until full combined. Pour half of mix over the top of your bread cubes in your baking pan.
Next, prepare your cream cheese filling by beating cream cheese, powdered sugar, and cinnamon together with an electric hand mixer.
Spread a layer of cream cheese evenly on the top of the bread cubes.
Stack another layer of bread cubes on top of that, pour remaining pumpkin batter over the whole thing, then place in the refrigerator to chill for at least 2 hours. This allows the bread to absorb all the batter.
Preheat oven to 350 degrees.
In a large bowl, combine flour, brown sugar, cinnamon, and butter, and mix together with hands until you have a crumbly topping.
Sprinkle topping and Pecans on top of casserole.
Bake in the oven at 350 degrees for 35-40 minutes. Remove, slice into square pieces, and serve.
