Something about Fall just makes me want to bake, bake, bake!  These cookies come together lickety-split with the help of Honeyville Yellow White Cake Mix (available online or special order it at your local store).  If you like soft, moist, and delicious cookies give this recipe a whirl!

3 cups Honeyville Yellow White Cake Mix
4 Tbsp Honeyville Powdered Whole Eggs
1/2 cup Water
1/2 cup plus 2 Tbsp Canned Pumpkin
1/2 cup Chocolate Chips (this time I used Mini Semi-Sweet Chocolate Chips)
1/4 tsp Cinnamon

Add all the ingredients in a large bowl.

Mix everything together using a big spoon.

Use a cookie scoop to measure out the dough.  Add dough to a baking mat lined sheet (or a greased cooking sheet works fine too).

Bake in a preheated 375 degree oven for 10-12 minutes.

Once the cookies are done baking, transfer to a cooling rack.  The recipe makes 36 cookies.

Next, find a book to read or a pile of leaves to jump in and eat these cookies!

I really enjoyed these cookies.  They are soft and yummy and aren’t overly sweet so I felt okay eating 2 or 3 right away, you know, for testing purposes! It is a tough job but someone has to make sure they are good right?!
