Ingredient:
3 cups Warm Water
1/4 cup Brown Sugar
7-8 cups Honeyville Alta Artisan Bread Flour
1 1/2 Tbsp SAF Yeast
Yields: 24 donuts
Directions:
Preheat oven to 425 degrees.
In your BOSCH Universal Mixer, combine the following ingredients in this order: Water, brown sugar, 4 cups flour, yeast. Turn mixer to #2 setting and, while mixing, add remaining flour 1 cup at a time until it begins to pull away from the sides. Knead in machine for 3-4 minutes.
Remove dough and place on hard surface.
Roll out dough and, using a donut cutter (similar to a cookie cutter. You can find these in any store in the baking aisle) cut out donut shapes.
Once cut out, place a sauce pan over the stove top at medium to low heat. Add 2 cups water and 2 Tbsp Baking Soda to the stove top, and bring to a light simmer.
Take each donut and place in the sauce pan. Let sit in water bath for 10 seconds on each side.
Remove donut and place on your USA Pan Cookie sheet, lined with parchment paper. Brush tops with melted butter and sprinkle sea salt on top.
Bake in 425 degree oven for 10-12 minutes, or until tops are a dark golden brown. Remove and allow to cool on the pan.
Get ready, these donuts are not what you expect. Your eyes will swear that you are looking at a fresh baked donut, but your mouth will be convinced your biting into a soft, delicious pretzel. Each taste will leave you more confused, yet craving more! Is it a pretzel? Is it a donut? Who cares, it’s delicious!
