Who says you can’t make delicious desserts from your food storage? No one, after trying out this easy recipe that’s fun to make for any occasion. This Friday is Valentine’s Day and I had no idea what to do for my husband. He’s not a flower guy and has more ties than I can count, but he always loves chocolate and peanut butter just like me (no wonder we got married). I decided to make some truffles, and what better thing to use than my powdered peanut butter!
Powdered Peanut Butter Truffles
1/2 cup reconstituted Honeyville Powdered Peanut Butter
1 cup Powdered Sugar
3 Tbsp softened Butter
1 lb dipping Chocolate
Start off by reconstituting your powdered peanut butter. The can instructions are a little off, so to make 1/2 cup of peanut butter, use 1 cup of powder with 1 tablespoon of water. If it’s too thick to manage, add another tablespoon of water. You want it creamy, but not too runny
Combine the peanut butter, powdered sugar and softened butter into a large bowl and mix thoroughly
After the mixture is nice and thick, start rolling your truffle balls and place them on a cookie sheet that’s covered with wax paper. Let them stand for 20 minutes until dry
While the truffles are drying, melt your dipping chocolate in a wide-open bowl for easy dipping. Make sure that when you melt the chocolate, dont overheat it because it will cause the chocolate to separate and not stay smooth. Once heated, stir vigorously to give the chocolate a shiny texture
Now you’re ready to dip! Get a fork or spoon with holes and dip the truffles into the chocolate until completely covered. Let the excess chocolate drip off and put the truffles back onto the cookie sheet to cool and dry. I put mine in the fridge for 15-20 minutes so they could harden fast
I shaped some into hearts for my Valentine, but you can make any shape you’d like. Get creative and try it out, maybe even enjoy some of these with a warm mug of Honeyville Hot Cocoa.
