Powdered Peanut Butter Cookies

Today’s recipe is the perfect example of this. Earlier this week we got a phone call from one of our followers, looking for a particular recipe. She was in the process of creating some fun, exciting Cookie In a Jar recipes for her daughters Girl Scout Troop to sell at an upcoming bake sale. The Cookie in a Jar recipe she was trying to create was a Peanut Butter Cookie recipe, using our amazing Powdered Peanut Butter, but unfortunately, she wasn’t having the best of luck, so she reached out to us to see if we had a basic Peanut Butter Cookie recipe using our Powdered Peanut Butter.
To her surprise, and also mine, in the 4 year history of our blog, and the many, many cookie recipes we’ve produced, we had never made a Peanut Butter cookie using our Powdered Peanut Butter. Crazy, right? You know I couldn’t let a great opportunity like that pass by, especially when it involves cookies! So, by request from one of our great followers, we’ve created a delicious, super-easy-to-bake, peanut butter cookie recipe, that could be easily transfer into a Cookie in a Jar recipe, if you choose. 
1 1/2 cups Honeyville Powdered Peanut Butter + 1/4 cup Water
1/2 cup (1 stick) Butter
1/2 cup Sugar
1/2 cup Brown Sugar
2 Tbsp Honeyville Powdered Whole Eggs + 3 Tbsp Water (1 egg)
1/2 tsp Salt
1 1/2 tsp Baking Soda
Preheat oven to 375 degrees.

Reconstituted Peanut Butter Powder

In a large mixing bowl, reconstitute your peanut butter by adding powder and 1/4 cup water together, then mixing until you get thick peanut butter.

Cookie Dough

Add sugars, butter, and powdered whole eggs, and mix together with an electric mixer until completely creamed together.

Cookie Flour

In a separate bowl, sift together flour, baking powder, salt, and baking soda. Add to wet mixture and mix until a soft dough forms.

Criss Cross Cookie Dough

On a greased baking pan, roll dough into 1 inch balls and place on sheet. Using a fork, flatten each ball, making a criss-cross pattern.

Baked Cookie

Bake at 375 degrees for 15 minutes, or until tops are lightly golden. Remove, and allow to cool 5 minutes before serving.
