What’s not to love about popcorn? The light, fluffy texture. The delicious taste and aroma. Whether drizzled with butter, topped with caramel, or sprinkled with powdered cheese, there really is no better treat than fresh, home-popped popcorn.
Now, imagine, if you will, a loaf of bread that contained all the deliciousness we love about fresh-popped, homemade popcorn, all baked up in each slice. Sounds way to good to be true, am I right? Wrong! Not only is it extremely easy to make, it’s just as tasty to eat! In fact, after baking up this bread, you may wonder if you could ever bake bread without popcorn again! Grab your air-popper, it’s time to bake up some Popcorn Bread!
Ingredients:
1/2 cup Honeyville Yellow Popcorn (about 7 cups popped popcorn)
3 cups Hot Water
1/4 cup Butter, melted
1/3 cup Sugar
2 Tbsp Salt
1 Egg
5-6 cups Honeyville Alta Artisan Bread Flour
3 Tbsp SAF Yeast
Yields: 2-3 loaves
Directions:
First, pop your popcorn.
Using any air popper of your choice, pop 1/2 cup popcorn. This should give you around 7 cups of popped corn.
Place popped corn in a food processor or blender and process until a fine powder forms.
In your BOSCH Universal Mixer, add the following ingredients in this order: water, butter, sugar, salt, egg, processed popcorn, yeast. Turn mixer to #2 setting and, while dough is mixing, slowly add flour 1 cup at a time until dough begins to pull away from the sides. Knead in machine for 3-4 minutes, or until dough is soft.
Remove dough from mixer and place in a greased bowl, cover, and let rise for 40 minutes.
Preheat oven to 400 degrees.
Once risen, punch down dough, remove, and divide into 2-3 loaves. Shape and place in your Norpro 8 x 4 1/2 pans, then let rise for 30 minutes.
Once risen, slice the tops of loafs, then brush with an egg wash of 1 egg and 1 Tbsp water, whisked together.
Place in 400 degree oven, knock temperature down to 350 degrees, then bake for 35 minutes. Remove and allow to cool on a wire rack before slicing and serving.
This bread bakes up light, fluffy, and full of all the taste we love about popcorn and bread!
