I love comfort food, don’t you? There’s just something about our favorite food, meal, or snack, that seems to always sooth our souls and fix whatever problems may be occurring in our lives. Just one bite, and everything is calm, peaceful, and right with the world.

Perhaps there is nothing more comforting than a tried and true traditional meal we’ve all grown up on, Peanut Butter & Jelly. Is there any two things that goes better together? The combination of smooth, rich peanut butter and sweet, delicious jelly, smothered together between two slices of bread, sends my taste buds back in time, and warms my heart with every bite! So what if you could take all the tastes that you’ve come to love with this favorite sandwich and bake it all together in a fresh, warm, fluffy bread? Too good to be true you say? Well, that’s exactly what we did!

Using the amazing formula Chef Brad gave us for baking bread, we’ve got a recipe that will not only delight all the little ones in your family, but also make a few of the bigger ones (including yourself) feel just like a kid again. You’ll need the Bosch Universal Mixer for this one, but trust me, you’re going to love our Peanut Butter & Jelly Filled Bread Recipe!

6-7 cups Honeyville Alta Artisan Bread Flour
4 cups milled Hard White Wheat
2/3 cups packed Brown Sugar
3 cups Honeyville Powdered Peanut Butter + 3/4 cups Water
3 cups Hot Water
1/4 cup Agave Nectar
1/4 cup Olive Oil
3 Eggs
3 Tbsp Honeyville Dough Conditioner
4 Tbsp SAF Instant Yeast
Fruit Jam of your choice

First, reconstitute your powdered peanut butter.

To do this, add powder and water to a mixing bowl and mix together. This should give you a little more than 1 1/2 cups peanut butter. Divide re-constituted peanut butter in half, and set aside. You’ll use half of the peanut butter in the actual bread dough and the other half spread on the bread.

In your Bosch Mixer, combine the following ingredients in this exact order: hot water, oil, agave nectar, eggs, half of the re-constituted peanut butter, brown sugar, milled hard white wheat, and dough conditioner. Place yeast on top, turn the Bosch to the #2 setting, and mix together.

Add the alta artisan flour 1 cup at a time as the dough is kneading, until the dough begins to clean from the sides of the bowl. This could be anywhere from 6-7 cups of flour. Once the dough begins to clean from the bowl, let it knead for an additional 2-3 minutes, then remove from the bowl.

Preheat oven to 400 degrees.

Place dough ball on a lightly oiled surface and divide into three 2 pound dough balls.

Flatten out a dough ball into a rectangle shape.

Take some of the remaining peanut butter that you had separated and lightly spread on top of the dough. Remember, you’ll be repeating this step for each dough ball.

Spread your favorite jam or jelly on top of the peanut butter.

Roll up the dough, similar to a jelly roll, pinch and fold in the sides, and shape like a loaf.

Repeat this process for each loaf.

Place each loaf in a greased, 9×5 bread pan and allow to raise for 30-60 minutes, or until they have doubled in size.

Place in a preheated 400 degree oven, knock temperature down to 350 degrees, and bake for 35 minutes.

Remove, allow to cool on a cooling rack for 10-15 minutes, then slice up and serve.

This may look like your typical loaf of bread on the outside, but don’t let that fool you! Inside you’ll find a delicious, warm bread packed with peanut butter and jelly goodness! The bread bakes up super light and fluffy, with a hint of peanut butter baked right into the loaf!

The delicious peanut butter/jelly swirl will make any person feel like they’re 4 years old again. You never knew that bread could taste this good!
