That’s why, with summer just around the corner, I knew I had to whip up the perfect dish to get us all in that “peachy” summer mood! What better way than a delicious pound cake? Made with our amazing Freeze Dried Peaches, this is the ideal dessert for any summertime gathering you may have planned. Grab a mixing spoon and call the neighbors over, it’s time to bake up some Peach Pound Cake!
Ingredients:
1/2 cup Butter, softened
1/2 cup Sugar
1/3 cup Brown Sugar
2 Eggs
1 tsp Vanilla
1 1/2 cups Honeyville Alta Artisan Flour
1/2 tsp Baking Powder
1/4 tsp Salt
1 cup Honeyville Freeze Dried Peaches
Frosting:
8 oz Cream Cheese
2 cups Powdered Sugar
2 Tbsp Water
Directions:
Preheat oven to 325 degrees.
In a large bowl, beat together butter, sugar, and brown sugar until light and fluffy. Add eggs and vanilla and beat together until fully combined.
In a separate bowl, whisk together flour, baking powder and salt.
Next, re-hydrate peaches by soaking in water until soft, then draining any excess liquid.
Add dry ingredients to wet ingredients and mix until a thick batter forms. Fold peaches into batter, then pour batter into your USA Pan Small Loaf Pan.
Bake at 325 degrees for 55-60 minutes. Remove and allow to cool in pan for 10 minutes, then turn out on a wire rack.
While cake is cooling, make your frosting my mixing cream cheese, powdered sugar, and water together with an electric hand mixer. Using a large spatula, spread frosting on top of cake, then slice and serve.
