Today’s recipe is everything you love about peach-inspired baked treats, with a healthy, gluten-free spin on it. I originally came across this recipe on BakingAMoment.com and wondered what it would be like in small, individual sized servings. Let me tell you, they are simply amazing! Now that our mouths are watering and stomachs growling, let’s bake up some gluten-free Peach Almond Tarts!
Yields: 3 individual Tarts
Preheat oven to 400 degrees.
In a large bowl, combine all crust ingredients, and mix together until a crumbly dough forms.
In small tart bowls, form dough in and around the sides.
Place in oven and bake at 400 degrees for 15 minutes, or until edges begin to brown. Remove and allow to cool completely.
While crusts are cooling, begin your filling. Using an electric hand mixer, whip heavy cream until soft peaks begin to form. Add sugar, vanilla, cream cheese, and almond extract, and continuing blending until a soft, cheesecake filling forms.
In a separate bowl, combine peaches with just a little bit of water until hydrated completely. Add honey and almond extract and toss together until completely combined.
Taking each tart, spoon in cheesecake filling.
Spread on peaches evenly, then serve. If you’d like, you can add a whipped topping on top.
