I love simple things, especially when it comes to meal time. There is just something appealing, in our hustle-and-bustle world, about a simple, easy-to-bake recipe. When you combine that simplicity with deliciousness, the outcome is even better!

Today’s recipe is all of that and more. Simple? Yes. At it’s core, it’s just our pancake mix and water. Delicious? Absolutely! This is an awesome take on a tried-and-true breakfast recipe that gives you the flavor and fun everyone in the family will like. Best of all, it’s easy to make and only takes 15 minutes to bake. Now that’s a breakfast everyone can enjoy. Time to get baking some Pancake Muffins!

Ingredients:
2 cups Honeyville Buttermilk Pancake Mix
1 1/2 cups Water
1/4 cup Honeyville Freeze Dried Strawberries
1/4 cup Honeyville Freeze Dried Raspberries
1/4 cup Honeyville Freeze Dried Peaches
2 Tbsp Agave Nectar
1 cup Honeyville Insta Whip + 1 cup cold Water

Directions:
Preheat oven to 400 degrees.

Mix pancake mix and water together until batter is smooth.

Spray muffin tray with non-stick cooking spray.

Using a measuring cup, pour batter into muffin tins.

Each cup should only be filled half way.

Place in oven and bake at 400 degrees for 15 minutes.

While muffins are baking, re-hydrate fruit by soaking together in a large bowl, then draining the excess water. Add agave and mix together.

Remove muffins from tin and allow to cool on a wire rack.

Slice off the top of the muffins, and using a spoon, scoop out a spoonful of fruit mix on top of the muffin.

Mix insta whip and water in a mixing bowl with an electric hand mixer until stiff peaks begin to form. Place a dollop of insta whip on top, and serve.
