Bread. Many have called it the staple of life. It makes sense when you think of it. No matter what meal or what time of day, bread seems to always become a part of every dish we enjoy. Because of this, bread has become more of a part of our daily lives than any other food out there.

Yes, bread is the dish we always turn to, and here at Honeyville, we’re always looking for the next great bread recipe. With so many different facets and variables with bread making, it’s easy to change a few things in your traditional loaf recipe and come out with completely different results. One of those things would have to be overnight raising.

Have you ever tried it? In it’s basic sense, overnight raising is simply letting your dough sit overnight instead of for a few hours, before you shape and bake your loaves. And yet, the benefits are so large with this simple technique. Letting your dough sit overnight gives the yeast a chance to really work it’s magic. In the process, you come out with a bread loaf that’s tangy, flavorful, and very similar to sourdough taste and texture. Smother it with a little melted butter and your taste buds get a freed ride to flavor town!

Alright, enough talk, let’s get baking. Grab your Bosch Universal Mixer and an empty bucket, it’s time to bake up some Overnight Baguettes!

1 cup Honeyville Hard White Wheat, milled
3 cups Water
1/3 cup Sugar
1 Tbsp Salt
4-6 cups Honeyville Alta Artisan Bread Flour
3 Tbsp SAF Yeast

First, mill your wheat. Using your Komo Classic Mill or Nutrimill Grain Mill, mill 1 cup hard white wheat. This should give you around 2 cups of flour.


In your Bosch Universal Mixer, combine the following ingredients in this order: water, sugar, salt, wheat flour, 2 cups Alta Artisan Flour, yeast. Turn mixer to #2 setting, and while dough is mixing, add remaining flour, 1 cup at a time, until dough begins to pull away from the sides. Knead in machine for 3-4 minutes.


Remove dough from machine, shape into a ball, and place in a greased Honeyville Food Bucket.


Cover with a soft cloth and let it raise overnight.

Before removing from bucket the next day, preheat oven to 450 degrees.


The next day your dough should have filled in a quarter of the bucket. You’ll also notice that the yeast will have a strong, almost fermented smell.


Remove and place on your countertop, sprayed with water.


Divide and shape into two baguettes. Place baguettes on your USA Pan Cookie Sheet, covered with Honeyville Corn Meal. Let sit for 30 minutes, then slice the tops and spray tops with water.


Bake at 450 degrees for 15 minutes, then knock temperature down to 350 degrees and bake for an additional 15 minutes. Remove and let baguettes cool on a wire rack before serving.


This is bread like you’ve never had it before. Letting the yeast do it’s work overnight packs each baguette with a flavor and texture you’ve never experienced before. This is how bread is supposed to be enjoyed!
