The school year is on the down hill side!!! (And can I mention- I am SOOOOOOOO excited!!! I am counting down!!! Just 4 more days until I don’t have to set an alarm clock in the mornings or be on a “school schedule”…..YAY!!!!!!) Whether this is your last week in school or you just have one or two more- it’s a time for teacher gifts, coaches gifts, etc…and for those of you who don’t have kiddos in school- aren’t we also in a need of a good treat every now and then?? Well here is a yummy one you will for sure want to try!!! Oatmeal Power Bars!
Ingredients:
1 cup Honeyville Quick Oats
1/2 cup Honeyville Sesame Seeds
1 cup Honeyville Coconut
1 cup Almonds (chopped)
1/2 cup Honeyville Milk Alternative
1/2 cup Toasted Wheat Germ
1 cup Light Corn Syrup
3/4 cup Sugar
1 1/2 cup Honeyville Powdered Peanut Butter + 1/2 cup water
2 cups Chocolate Chips
Directions:
Bake oats at 300 degrees for 10-15 mins, stirring every 5 minutes. Pour into a large bowl and add coconut, nuts, dry milk and wheat germ. In a separate bowl mix together peanut butter powder and water. In a pot combine sugar and corn syrup. Bring to a boil. Remove from heat and stir in peanut butter. Pour over oatmeal mixture and mix well. Spread in a greased pan and press down. Chill. Melt chocolate chips and frost the bars.

Heat sugar and corn sugar together, then stir in peanut butter. Pour over all ingredients and mix well.
Spread mixture in a greased pan and press down. Melt the chocolate and spread on top. Then store in fridge.
