It’s Holiday time, and if you’re anything like me, you know that this can only mean one thing. Work! That’s right, for the next 3 months we’ll be spending our time running from store-to-store, hanging up, then taking down, then hanging up again decorations for Halloween, Thanksgiving, and Christmas, standing in long lines at the stores, baking numerous treats, and searching aimlessly for sales and discounts!

Yes, crunch time is officially upon us, but how do we keep the energy needed to get us through this 3 month marathon? Chocolate and Diet Soda will not do it alone. We need something healthy, delicious, and chock full of energy! It also has to be easy-to-bake and something we can eat on-the-go. That’s why when I found this recipe, I knew it was something that we all needed this time of year! It’s packed will plenty of energy ingredients, including oats, peanut butter, and flax seed meal, with just the right amount of sweetness! And best of all, no baking required! Meet your new friend this Holiday season, Oatmeal Energy Bites!

Ingredients:
1 cup Honeyville Regular Rolled Oats
2/3 cup Honeyville Organic Coconut Flour
1 1/4 cup Honeyville Powdered Peanut Butter + 4 Tbsp Water
1/2 cup milled Honeyville Flax Seeds
1/2 cup Chocolate Chips
1/3 cup Agave Nectar
1 Tbsp Honeyville Sunflower Seeds
1 tsp Vanilla

Directions:
First, toast your oats and sunflower seeds.

To do this, place them in a preheated oven of 350 degrees for 15 minutes. This will give them that toasted flavor, and make them easier to combine with the other ingredients.

Re-hydrate powdered peanut butter by mixing powder and water together in a bowl. This should give you a little less than a cup of peanut butter.

Mill your flax seed in a small mill or coffee grinder.

Add all your ingredients to a large bowl.

Mix thoroughly together, cover, and place in the refrigerator for 30 minutes.

Remove mixture, and with your hands, roll into golf ball-sized bites.

Make sure to pack ingredients together tightly so that they can stay together.

Place in freezer for another 30 minutes, remove and serve.

One thing you’ll notice immediately about these bites is the flavor. The sweetness of the coconut flour, combined with the subtle hints of agave, chocolate chips, and oats is exactly what you need to boost your energy and get you excited for the day.
