No bake. When it comes to making treats in the hot summer months, there aren’t two better words in the English language to hear than these. Being able to create a delicious, mouth watering snack, without heating up the kitchen and, in turn, your home, is a joy we all long for in the dead heat of summer.

Now, imagine incorporating this “no bake” philosophy with a dark chocolate dish that is not only absolutely amazing, but also healthy for you! Sounds too good to be true, right? Wrong! Using some of our favorite Honeyville ingredients, we’ve created the perfect summertime treat that can be prepared without any use of the oven. “No bake” never looked so good! Say hello to our No Bake Chocolate Coconut Oatmeal Cookies!

2 cups Coconut Palm Sugar
1/2 cup Organic Coconut Oil
1 Tbsp Honeyville Baker’s Cocoa Powder
1/2 cup Almond Milk
1/2 cup Honeyville Organic Peanut Butter Powder
1/2 cup Dark Chocolate Chips
1 tsp Vanilla
2 cups Honeyville Regular Rolled Oats

First, prepare your mixture.


In a large sauce pan, add coconut sugar, coconut oil, cocoa powder, and almond milk, stirring as you bring it to a boil. Once there, let boil for 1 minute, then promptly remove from heat.


Add peanut butter powder, vanilla, and chocolate chips and mix until completely incorporated.


Next, add oats, 1 cup at a time, and stir in until completely combined.


On your USA Pan Cookie Sheet, lined with parchment paper, spoon heaping tablespoon-sized mounts of mixture. Place in refrigerator and let cool and set up for 1 hour.


These no bake cookies are a dark chocolate lovers dream! Not only does the rich taste of sweet cacao ring through the entire snack, but the bold flavors from the peanut butter, coconut oil, and coconut sugar give an added level of taste you never knew you craved for.
