Mini Peach Pies

It just isn’t summer without a fresh peach dessert, am I right? I know, for many of us summer seems to be coming close to an end. Kids are heading back to school, vacations are coming to a close, and everything we love about these hot summer months seems to be wrapping up. But can’t we just hold on to a little more of that summer magic? Can’t we keep that fun, summertime feeling a little longer?

Yes we can, and as you can tell by the first sentence to this post, it involves peaches! Think about it, is there anything more summer than these fuzzy, sweet fruits? Baked into a delicious pastry or sweet, and you’ve got a summer-time snack that will keep you in shorts and flip-flops indefinitely!
We took our delicious Freeze Dried Peaches and dropped them into a flakey, homemade pie crust to give you the perfect hand-held dessert. Get ready, it’s time for Mini Peach Pies!
Ingredients (Crust):
1/2 cup cold Water
3/4 cup Butter, cubed
4 Tbsp Shortening
4 Tbsp Sugar
1/2 cup Brown Sugar
1/4 cup Sugar
2 tsp Cinnamon
1 Tbsp Butter
First, make your pie crust.
In your BOSCH Food Processor attachment, add water, flour, butter, shortening, and sugar, and blend until a stick dough forms.
Remove dough from processor, wrap in plastic wrap, and chill in refrigerator for 3-4 hours.
Filling Ingredients
In a large bowl, combine re-hydrated peaches, brown sugar, sugar, flour, cinnamon, and butter, and mix together until your filling is complete.
Dough Circles
Remove dough, roll out on floured surface, then cut out crusts with a ramekin.
Dough with Filling
Place one dough circle on a cookie sheet and top with pie filling.
Pie Top
Place another dough circle on top, crimp the sides with a fork to seal, then slice top. Brush with egg wash.
Pie Baked
Bake in oven at 400 degrees for 30 minutes, or until tops are golden brown. Remove and allow to cool for 10 minutes before serving.
