No matter what meal your enjoying, what dish your downing, or what treat your currently snacking on, we can all emphatically agree that no matter how delicious it is, it would be better with bacon!

Yes, bacon seems to make every day just a little bit better and every moment just a little bit brighter. That’s really what led to today’s post. Now muffins, in and of themselves, are the perfect dishes for any morning meal. Light, fluffy, and packed with some of our favorite ingredients, you really can’t go wrong with any muffin you choose. But what if you could raise the bar on muffin enjoyment? What if you could infuse that traditional muffin with the taste and texture of the gods? What if you could bring some bacon flavor to your muffin mediocrity?

I’m here to tell you that you can! Using our delicious Bacon Flavored TVP, you can create a lip smacking, taste bud exploding muffin that packs all the bacon flavor you enjoy, without all the fat of traditional bacon. Ingredients:
1/4 cup Butter
1/4 cup Vegetable Oil
1/2 cup Sugar
1/3 cup Brown Sugar
2 Eggs
1 1/2 tsp Baking Powder
1/4 tsp Baking Soda
3/4 tsp Salt
1 tsp Vanilla
2 2/3 cup Honeyville Alta Artisan Flour
1 cup Milk
1/3 cup Honeyville Bacon Flavored TVP

Maple Glaze:
1 cup Powdered Sugar
1/4 cup Maple Syrup

Yields: 12 Muffins

Directions:
Preheat oven to 425 degrees.

In a medium mixing bowl, cream together butter, vegetable oil, and sugars until smooth. Add eggs, baking powder, baking soda, salt, and vanilla, and mix well.

Add flour and milk and mix with a large spatula or spoon until batter is smooth.

Add bacon flavored TVP and mix until completely combined.

In your USA Pan 12-cup Muffin Pan, fill each cup about half way with muffin batter. Don’t worry about greasing pan before, as your USA Pan nonstick coating will keep these muffins from sticking during baking.

Bake at 425 degrees for 15 minutes, or until tops of muffins spring back after a light touch. Remove and allow to cool on a wire rack.

While muffins are cooling, make glaze my whisking powdered sugar and maple syrup together. HINT: you may have to warm up maple syrup to make it easier to mix together.

Gently drizzle glaze on top of muffins and allow to cool and set before serving.
