Lemon and cookies. Is there any tastier combination to enjoy during the Holidays? Whenever I think of warm, delicious cookies during this time of year, my mind almost always thinks of lemon. It’s almost as if the two were made for each other.

Today’s Holiday cookie recipe is one that not only looks amazing and is extremely fun to make, it also brings in that delicious taste of, well, lemons of course! Made with our awesome Alta Artisan Flour and a glaze created with our impressive Ultra Gel, we’ve got a cookie you’re going to love to give to friends and family this year. And the taste? To die for! It’s time to bake up some Lemon Pinwheel Cookies!

Ingredients (Cookie):
1/2 cup Butter, softened
1 cup Sugar
1 tsp Baking Powder
1/4 tsp Baking Soda
Dash of Salt
1 Egg
1/2 cup Sour Cream
1 tsp Lemon Zest
1 tsp Vanilla
2 3/4 cup Honeyville Alta Artisan Flour

Lemon Filling:
1/2 cup Sugar
1 cup Water
1 Lemon, Juiced
1 Lemon, Zested
2 drops Yellow Food Coloring
3 Tbsp Ultra Gel

Icing:
1 cup Powdered Sugar
3 tsp Milk
1/4 tsp Almond Extract

Directions:
First, prepare your cookie dough.

Batter

To do this, beat butter, sugar, baking powder, baking soda, and salt together in a large mixing bowl with an electric hand mixer. Add egg, sour cream, lemon zest, and vanilla and mix until combined. Add flour and mix until dough forms.

Wrap dough in plastic wrap and let chill in the refrigerator for 2 hours.

Preheat oven to 375 degrees.

Cookie-Dough

Remove dough, roll out, and slice into squares with a pizza cuter. Place squares on your USA Pan Cookie Sheet, covered in parchment paper, and slice the sides of the dough all the way down to the middle.

Lemon-Glaze

Make your lemon filling by combining sugar, water, lemon juice, lemon zest, food coloring and ultra gel in a bowl and whisking together. Heat in microwave for 2 minutes, remove, and whisk again, then let cool.

Glaze-on-Cookie

Once cooled, drop a spoonful of filling on to middle of each cookie.

Shaped-Pinwheel

Taking the corner of each flap, fold every other tip into the center of each square to form a pinwheel shape. Press dough gently in the center to seal the tips to the filling.

Baked-Cookie

Bake at 375 degrees for 10-12 minutes, or until cookie feels firm. Be sure not to over bake.

While baking, make your frosting by whisking together powdered sugar, milk, and almond extract until a thick glaze forms.

Cookie-with-Icing

Once cookies are cooled, drizzle frosting over the top, then serve.
