Ingredients:
1/2 cup Honeyville Organic Quinoa
1/2 cup Honeyville Long Grain White Rice
2 cups Water
2 Eggs
3 Garlic Cloves, minced
2 tsp Basil
1/2 tsp Salt
1/2 tsp Black Pepper
1/2 tsp Chili Powder
Dipping Sauce:
1/4 cup Honeyville Tomato Powder + 3/4 cup Water
1 tsp Oregano
1 Tbsp Sugar
Directions:
First, cook your quinoa and rice.
Combine both quinoa and rice together, with 2 cups water, in your Fagor 3 in 1 Pressure Cooker. Set the rice setting to “White Rice” and press start. The quinoa and rice will cook together for about 6 minutes. Once finished cooking, remove and place in a large bowl.
While quinoa is cooking, re-hydrate your cheese by soaking it in water until soft, then draining any excess liquid.
In the large bowl that your quinoa and rice are in, add cheese, onions, garlic, basil, salt, black pepper, chili powder, and eggs, and mix until a very thick batter forms.
Using a spoon, scoop out batter and place in greased muffin tins.
Bake at 350 degrees for 20 minutes, or until tops are a light golden brown. Remove and allow to cool.
While bites are cooling, make your dipping sauce by combining tomato powder, water, spice, oregano, and sugar, and whisking together until a tomato sauce forms.
Place on a plate and serve.
