Healthy and tasty. These aren’t two words you regularly hear in the same sentence. In fact, when you hear one, it’s usually in contrast with the other. Have you ever found yourself asking the question “How does it taste?” only to get the response “Well, it’s really healthy.” Why can’t “healthy” and “tasty” both be used to describe the same food? Are we destined to only have one or the other?

1/2 cup Honeyville Organic Quinoa
1/2 cup Honeyville Long Grain White Rice
2 cups Water
3 Garlic Cloves, minced
2 tsp Basil
1/2 tsp Salt
1/2 tsp Black Pepper
1/2 tsp Chili Powder
1/4 cup Honeyville Tomato Powder + 3/4 cup Water
1 tsp Oregano
1 Tbsp Sugar
First, cook your quinoa and rice.
Combine both quinoa and rice together, with 2 cups water, in your Fagor 3 in 1 Pressure Cooker. Set the rice setting to “White Rice” and press start. The quinoa and rice will cook together for about 6 minutes. Once finished cooking, remove and place in a large bowl.
While quinoa is cooking, re-hydrate your cheese by soaking it in water until soft, then draining any excess liquid.
In the large bowl that your quinoa and rice are in, add cheese, onions, garlic, basil, salt, black pepper, chili powder, and eggs, and mix until a very thick batter forms.
Using a spoon, scoop out batter and place in greased muffin tins.
Bake at 350 degrees for 20 minutes, or until tops are a light golden brown. Remove and allow to cool.
While bites are cooling, make your dipping sauce by combining tomato powder, water, spice, oregano, and sugar, and whisking together until a tomato sauce forms.
Place on a plate and serve.
