School is back in session, family schedules are busy again, we are running around like crazy in the morning trying to get out the door…..so why not have a “grab and go” breakfast? This is the perfect idea! You make these ahead and eat them the following week or freeze and eat whenever you want.
Ingredients:
1 tsp. Vanilla Extract
2 cups Applesauce (unsweetened)
1/2 cup Honeyville Freeze Dried Banana
3 1/4 cup Water
1/2 cup Honeyville Granulated Honey
1/4 cup Honeyville Powdered Whole Eggs
5 cups Honeyville 6 Grain Rolled Cereal
1/4 cup Honeyville Flaxseed meal
1 T. Baking Powder
3/4 tsp. Salt
2/3 cup Honeyville Instant Non-Fat Dry Milk
Optional:
**I used ALL optional ingredients and LOVED it!**
1 Tbsp. Chess Tess Wise Women Blend
1 cup Brown Sugar
Topping Suggestions:
Craisins, Raisins, Honeyville Freeze Dried Fruit, Coconut, Nuts, Chocolate Chips
Directions:
Pre-heat oven to 350 degrees
Re-hydrate freeze dried banana’s according to package instructions and then mash them.
Mix vanilla, applesauce, banana’s and granulated honey together in a mixing bowl.
Mix egg powder, 6 grain cereal, flaxseed meal, spice blend, brown sugar, baking powder, salt, and powdered milk together in a separate bowl.
Mix dry and wet ingredients together; add in water
Spray muffin tims with cooking spray or use cupcake liners. Fill with mixture and any desired toppings and bake 25-30 mins until a toothpick in center comes out clean.
Cool and enjoy or freeze them.
Hints:
-I tried craisins, chocolate chips, coconut, and freeze dried fruit in mine! I liked having toppings versus plain muffins!
-This recipe gave me about 32 muffins
-When freezing, pull out the night before. You can heat in the microwave if you want them warm
-Batter may be runny before baking, it’s normal!
-You can substitute the 6 Grain with 4 Grain Cereal if you want (I did half 6 grain and half 4 grain)
