Summertime is all about pool parties, baseball, running through sprinklers, and of course, lots and lots of Popsicle eating! I can still hear the sweet sound of the Ice Cream truck as it rolled through my childhood neighborhood each summer day. You know what I’m talking about. You bolt in to the house first, begging your mom for some money, then bolt out, hoping you haven’t missed the truck yet. I can still remember all the cool and unique flavors of Popsicles he had. Every flavor you could think of was there!

Well, what if I told you that you can have that same feeling, get those same flavors, and all while using products found in your food storage pantry? Not a believer yet? Well, check out these three amazing recipes below that show how you can use your Honeyville food storage to make delicious (and healthy) summer Popsicles.

For our Popsicles, we used a Zoku 6 Classic Pops Mold. You can find these at any of your local Honeyville Store locations, but any Popsicle Mold will work.

Banana Fudge Frozen Bar

Yields: 6 Bars
Ingredients:
1/2 cup Honeyville Freeze Dried Bananas
3/4 cup Honeyville Chocolate Milk Alternative
4 cups Water

Directions:

Re-hydrate Bananas by soaking them in a separate bowl, then drain.

Combine Chocolate Milk Alternative powder and Water in a Pitcher and whisk until ingredients are completely blended together.

With a spoon, drop 1 to 2 spoonfuls of Banana into your Popsicle molds. The amount you drop in depends on the amount of Banana taste you desire in the bar.

Pour the Chocolate Milk Alternative into the Popsicle molds.

Place in freezer and let freeze for 7-8 hours.

Creamy Strawberry Frozen Bar

Yields: 6 Bars
Ingredients:
1/2 cup Honeyville Freeze Dried Strawberries
1/2 cup Honeyville Strawberry Milk Alternative
4 cups Water

Directions:

Re-hydrate Strawberries by soaking them in a separate bowl, then drain.

Combine Strawberry Milk Alternative powder and Water in a Pitcher and whisk until ingredients are completely blended together.

With a spoon, drop 1 to 2 spoonfuls of Strawberries into your Popsicle molds. The amount you drop in depends on the amount of Strawberries taste you desire in the bar.

Pour the Strawberry Milk Alternative into the Popsicle molds.

Place in freezer and let freeze for 7-8 hours.

Fruit Medley Popsicle

Yields: 6 Bars
Ingredients:
1/2 cup Honeyville Freeze Dried Strawberries
1/2 cup Honeyville Freeze Dried Blackberries
1/2 cup Honeyville Freeze Dried Raspberries
1/2 cup Honeyville Freeze Dried Mangos
1/2 cup Honeyville Freeze Dried Peaches
2 Tbsp White Sugar

Directions:

In a large bowl, combine Strawberries, Blackberries, Raspberries, Mango, and Peaches and let re-hydrate by soaking in water.

Once fruit is soft, Take a strainer and another bowl, and drain the remaining liquid into a separate bowl. Do not through out liquid. You’ll need this later.

In a separate bowl, add drained fruit and White Sugar and gently stir until Sugar is completely incorporated into the fruit.

With a spoon, drop in 4 spoonfuls of fruit into Popsicle molds.

Pour the drained liquid into the Popsicle molds.

Place in freezer and let freeze for 7-8 hours.

All three Popsicles had an amazing taste and texture, but our favorite, by far, was the Fruit Medley Popsicle. The combination of the different freeze dried fruits, along with the hint of sugar, gave this Popsicle a delicious, refreshing flavor that is exactly what you need on a hot, summer day.
