These light, fluffy cookies are rich with flavor, full of texture, and exactly what you need to calm any cookie craving that might come along. The catch, you ask? These cookies are completely gluten-free! That’s right, thanks to our amazing Hazelnut Flour and Fine Rice Flour, we’ve concocted the perfect cookie sandwich recipe that hits all your taste-testing requirements, while still meeting the needs of those that may be gluten intolerant. Directions:
2 cups Honeyville Hazelnut Flour
1 cup Honeyville Fine Rice Flour
3 Eggs
4 Tbsp Water
1/2 cup Butter, softened
1/2 cup Organic Coconut Sugar
Chocolate Frosting:
1/2 cup Honeyville Baker’s Cocoa Powder
3 oz Cream Cheese, softened
1/2 cup Butter, softened
5 Tbsp Milk
1 tsp Vanilla
2 cups Powdered Sugar
Yields: 6 sandwich cookies
Directions:
Preheat oven to 350 degrees.
In a large bowl, combine hazelnut flour, rice flour, eggs, water, butter, and coconut sugar together, and mix until a thick but sticky cookie dough forms.
On your USA Pan Cookie Pan, lined with parchment paper, place spoonfuls of dough, then press down to form a cookie shape.
Bake at 350 degrees for 15-18 minutes, or until cookies are soft, yet firm. Remove and allow to cool while you make your frosting.
In a large bowl, combine baker’s cocoa, cream cheese, butter, milk, vanilla, and powdered sugar, and mix together with an electric hand mixer until a soft frosting forms.
Once cookies are cooled, frost the bottom of one cookie and place the bottom of the other cookie on top, forming a cookie sandwich. Place in refrigerator and allow to set up for 15 minutes before serving.
