Fall time and harvest time. Nearly synonymous with each other, you simply can’t think of one without the other. Every year, when the leaves change and the air cools, we automatically think of red apples ripe for the picking, plump pumpkins a bright orange hue, and tall corn stalks slowly transforming from green to gold.
Next, combine all your ingredients in your Bosch Universal Mixer, or our soon to be revealed mixer, in the following order: Water, butter, sugar, salt, whole grain flour, 1 cup of Alta Artisan Flour, and yeast. Turn mixer on and, while ingredients are mixing, and remaining alta artisan flour, until dough begins to pull away from the sides. Knead in machine for 4-5 minutes.
Remove, shape into a ball, and place in a greased bowl, then cover and let rise for 30 minutes.
You’ll want your dough to be doubled in size.
Punch dough down, remove, and shape into a loaf. Place in your greased USA Pan Hearth Pan and let rise until double.
This bread bakes up perfectly, and is amazingly rich and flavorful. The combination of the three whole grains, ground into flour, give not only an absolutely delightful taste, they also give the perfect autumn hue to this impressive loaf. Serve this up with some butter and your favorite jam and your cool Fall days will be just about perfect.
