We love all types of bread here at Honeyville. Whether it’s your traditional white loaf, heart-healthy wheat loaf, gluten or grain-free sandwich rolls, or anything else you can think of. Bread is just a part of us. It makes our meals, and even our lives, just a little bit better.

It’s this passion for bread that brought us to today’s recipe. You might even say that today’s dish is the first of all breads. The original, so to speak, where all breads have evolved from. That’s right, we’re baking up some Greek Pita Bread!
Popular in the Mediterranean countries, with variations found all over the world, pita bread is a flat bread, served with many traditional Greek dishes. There are many different types of pita breads, some with large pockets, used as sandwiches, and others made with different flours and ingredients. Today’s recipe is what you might call your basic, all purpose pita bread, perfect for any meal. Not only is it super easy to bake up, it’s extremely delicious. Don’t let the flat look fool you. There’s a lot of flavor packed into these little discs! Get ready, it’s time to bake up some Greek Pita Bread!
Ingredients:
1 1/2 cups Hot Water
1/4 cup Olive Oil
2 Tbsp Sugar
2 tsp Salt
1 Tbsp SAF Yeast
Yields: 12-14 pita loafs
Directions:
First, mill your wheat.

Milling-Wheat

In your Komo Stone Grain Mill or Nutrimill Grain Mill, mill 1/2 cup of hard white wheat into flour. this should give you 1 cup of wheat flour.

Dough-in-Mixer

In your BOSCH Universal Mixer, add the following ingredients in this order: water, oil, sugar, salt, milled hard white wheat, and yeast. Turn mixer to #2 setting and while ingredients are mixing, add alta artisan flour 1 cup at a time. Once dough begins to pull away from the sides, knead an additional 3-4 minutes in the machine.

Dough-in-Bowl

Remove dough, place in a greased bowl, cover, and let rise for 30 minutes to an hour.

Dividing Dough

Once dough has risen, punch down dough, remove, and divide into small, ping pong shaped balls using your Wüsthof Bench Scraper.

Prepare a Cast Iron Skillet by placing it on your stove top and turning to medium-high heat.

Rolled-Out-Dough

Take a dough ball and roll out until flat and thin.

Pita-on-Skillet

Gently lay on top of warmed skillet.

Baked-Pita

Bake on one side for 30 seconds, then flip and allow to bake on opposite side for 1-2 minutes. Repeat process for each dough ball.

Pita-Bread

This bread, though small and thin, is packed full of all the flavor and goodness you’ve come to expect in Pita loafs. While the bread is thin and light, the flavor combination of the wheat flour and alta artisan flour give this bread the perfect blend of taste and texture. Serve this up with any meal, or simply spread a little butter over the top as a quick snack. You and your family will be loving this recipe for years to come!
