In your Komo Stone Grain Mill or Nutrimill Grain Mill, mill 1/2 cup of hard white wheat into flour. this should give you 1 cup of wheat flour.
In your BOSCH Universal Mixer, add the following ingredients in this order: water, oil, sugar, salt, milled hard white wheat, and yeast. Turn mixer to #2 setting and while ingredients are mixing, add alta artisan flour 1 cup at a time. Once dough begins to pull away from the sides, knead an additional 3-4 minutes in the machine.
Remove dough, place in a greased bowl, cover, and let rise for 30 minutes to an hour.
Once dough has risen, punch down dough, remove, and divide into small, ping pong shaped balls using your Wüsthof Bench Scraper.
Take a dough ball and roll out until flat and thin.
Gently lay on top of warmed skillet.
Bake on one side for 30 seconds, then flip and allow to bake on opposite side for 1-2 minutes. Repeat process for each dough ball.
