It isn’t officially spring without a delicious, lemon flavored dessert! As much a part of spring time as pastel colored eggs and yellow baby chicks, lemon custards, crepes, pastries, and pies flood our senses and wake us up to everything cheery, fresh, and new.

Today’s recipe is exactly what you’re looking for in a spring time treat. Filled with all the lemon goodness you’ve come to expect, these lemon bars have one little secret – they’re made with our delicious Grandpa’s Kitchen Gluten Free Flour blend!

Let me just say that I love this flour! When it comes to a gluten free flour substitute, nothing gets better than this. It’s by far the closest direct substitute I’ve found in recipes for traditional flour, and bakes up delicious creations every time we use it. We’ve tried it in breads, muffins, waffles, and just about everything else you can imagine, with nothing but success. And our small flour blend bag pictured above is just the right amount for this recipe. That means you can test it out on this treat, then order more when you realize how much you love it. 1 cup Butter, cubed
2 cups Grandpa’s Kitchen Gluten Free Flour Blend
1/2 cup Powdered Sugar

4 Eggs
1/2 cup Lemon Juice
2 cups Sugar
4 Tbsp Grandpa’s Kitchen Gluten Free Flour Blend
1/2 tsp Baking Powder

Preheat oven to 350 degrees.

Prepare your butter by slicing it in to cubes.

Place butter, flour, and powdered sugar in a large bowl and, using a pastry cutter, mix together until a crumbly mix begins to form.

Press mix into an 8×8 baking pan and bake at 350 degrees for 20-25 minutes.

Remove and allow to cool.

In a large mixing bowl, combine eggs, lemon juice, sugar, flour, and baking powder, and mix together with an electric hand mixer until fully combined.

Pour filling on top of baked crust. Bake at 350 degrees for 40-45 minutes.

Remove and allow to cool. Dust with powdered sugar, slice and serve.
