Garbanzo Bean Cookies

Is there anything better than a warm, gooey cookie? I can still remember as a child coming home after a hard day at school, only to find that my mom had made a fresh batch of her famous chocolate chip cookies! Something about those delicious, soft treats seemed to make even the worse day better than it had been.

Cookies are food for the soul! They clear away the cloudy skies, heal all boo-boo’s (both physical and emotional) and repair broken hearts. They bring us together as family members, and can turn even the most stern frown upside down. So how do you improve on something so great already? How do you make it even better?

How about making it with beans? Yeah, you heard me right, beans! Now, before you call me crazy and run off, never to view our blog again, hear me out for a minute. Not only are beans super healthy for us, when used in a cookie, they can help eliminate some of those main ingredients that can keep some of us from enjoying our favorite cookies. Mainly, gluten. At the same time, they give the cookie the same texture, integrity, and overall taste that we’ve come to love in traditional cookies. We get everything we want, without having to include the few things we don’t. Really, can you pass up an opportunity like that? It’s time to take the “cookie” to the next level. It’s time to make Garbanzo Bean Cookies!

Ingredients:
1 1/4 cups Honeyville Garbanzo Beans
3/4 cup Honeyville Powdered Peanut Butter + 1/4 cup Water
1/4 cup Raw Honey
2 Tbsp Organic Coconut Oil
2 tsp Vanilla
1 tsp Baking Powder
1/2 cup Chocolate Chips

Directions:
Preheat oven to 350 degrees.

Beans Soaking

In a large pot, add beans and 4 cups water. Bring to a quick boil for 2 minutes, then cover and let sit for 40 minutes.

Dry Beans

Rinse beans then pat dry the beans with a paper towel.

Peanut Butter

Reconstitute your peanut butter by adding powder and water and mixing in a separate bowl.

Ingredients in Food Processor

In your BOSCH Food Processor attachment, add beans, peanut butter, honey, coconut oil, vanilla, and baking powder.

Cookie Batter

Process until a smooth batter forms. Add chocolate chips and pulse 1-2 times until chips are combined.

Dough Ball

On a large cookie pan covered in parchment paper, drop ping-pong shaped dough balls.

Baked Cookie

Bake at 350 degrees for 10-12 minutes. Remove, and allow to cool before serving.
