What’s your favorite Holiday cookie? You know, that delicious treat that you simply can’t go without! When the temperature drops and the colorful lights come out, we all have a favorite cookie recipe that helps us ring in our Holiday celebrations.

But what makes a Holiday cookie different? Is it the taste, the texture, or something else? Whatever it may be, one thing is for sure, discovering that perfect Holiday cookie can be a tasty experience!

Today, we thought we’d submit a new one for your dining pleasure! Made with our Fine White Rice Flour, these cookies are not only tasty, but completely gluten-free! Now how can you pass that up? Get ready, it’s time to bake up some Gluten-Free Double Chocolate Cookies.

2 Eggs
1/2 cup Olive Oil
1 tsp Vanilla
1/2 cup Sugar
1 1/2 cup Honeyville Fine Rice Flour
1/2 cup Organic Cacao Powder (or Baker’s Cocoa)
1 tsp Baking Soda
1 cup Dark Chocolate Chips

Preheat oven to 350 degrees.


In a microwave bowl, melt 1/2 cup of your dark chocolate chips. Once melted, combine in a large bowl with eggs, olive oil, vanilla, and sugar, and whisk together until completely incorporated.


Add flour, cacao powder, baking soda, and remaining dark chocolate chips, and mix until a thick batter forms.


Roll batter into small balls and place on your USA Pan Baking Sheet, lined with parchment paper. Bake at 350 degrees for 10-12 minutes. Remove and let cool on a wire rack.
