While most gluten-free cakes, cookies, and desserts are typically dry, brittle, and seem to fall apart with the slightest touch, this cake is soft, moist, and simply melts in your mouth with every bite. 4 Eggs, separated
1 Tbsp Lemon Juice
3/4 cup Sugar
1 Tbsp Vanilla
1/2 cup Butter, melted
2 cups Warm Milk
3/4 cup Grandpa’s Kitchen Gluten-Free Flour Blend
2 Tbsp Ultra Gel

Preheat oven to 325 degrees.


In a large bowl combine egg whites, lemon juice, and a 1/2 cup sugar, and beat together with an electric hand mixer until high, glossy peaks form, then set aside.


In a separate bowl, combine egg yolks, 1/4 cup sugar, and vanilla, and beat with electric hand mixer until ingredients are combined and pale. Add melted butter, flour, ultra gel, and warm milk, and beat until combined.


Next, add your egg whites to mixture and mix with a large spoon, just until the white coloring isn’t visible.


Pour your batter into your lightly greased USA Pan Square Cake Pan (8×8).


Place in oven and bake at 325 degrees for 50 minutes. Remove and let cool in pan for 15 minutes. Just before serving, dust tops with powdered sugar, slice, and serve.
