I’m all about flavor combinations, how about you? There’s just something exciting about taking two separate flavors and baking them together into one delicious dish. Sometimes it doesn’t work out (can anyone say Fruitcake?). Other times, it’s pure baking genius!

Take, for example, today’s recipe. Our two main flavors are strong contenders that in any other recipe could stand on their own. But combined together in a moist pound cake, you get a delicious blend of tropical flavors and paradise your taste buds won’t want to miss. Make the whole thing gluten free and, well, you have an ideal, healthy treat the whole family will love! It’s flavor combination time! Let’s get to baking some Coconut Lime Pound Cake!

Ingredients:
2 cups Honeyville Organic Coconut Flour
1 tsp Salt
2 tsp Baking Powder
3/4 cup Butter, softened
4 oz Cream Cheese
10 Eggs
5 Tbsp Honey
2 cups Plain Greek Yogurt
2 Tbsp Vanilla
Zest of 1 Lime
Juice of 1 Lime

Frosting:
1 1/2 cups Powdered Sugar
Juice 1 Lime
Zest 1 Lime
2 tsp Coconut Oil
1 cup Heavy Cream

Directions:
Preheat oven 325 degrees.

In a large mixing bowl whisk together coconut flour, baking powder, and salt.

In a separate mixing bowl, combine butter and cream cheese and mix with a hand mixer until smooth. Add honey, eggs, yogurt, and vanilla and mix until all wet ingredients are completely combined.

Add dry ingredients to wet and mix until a thick batter forms. Zest lime and add juice, then mix until fully combined.

Take a 9×5 pan and line with parchment paper. Fill pan with batter until it is right up to the brim. You may have a little batter left over.

Place in oven and bake at 325 degrees for 60-65 minutes, or until a toothpick comes out cleanly.

Remove and let cool in the pan for at least 1 hour. After 1 hour, remove from pan and let cool on a wire rack for 15-20 minutes.

While cake is cooling on rack, make your frosting by combining all frosting ingredients and mixing with an electric hand mixer until a soft frosting forms.

Frost cake, add sliced limes (if desired) and serve.
