What’s your favorite thing to eat for Breakfast? For me, waffles would have to be on my top 5 “Best Breakfast” list. They’re just awesome, especially when the leaves begin to change and the temperature begins to drop.
Some of my best childhood memories are waking up on a cold fall or winter morning, only to smell the delicious scent of freshly-made waffle mix baking in the family waffle iron. Oh the joy, oh the excitement! Really, is there any way to top homemade waffles? How about making them gluten free and adding a special, secret ingredient?
Say hello to our to our Grandpa’s Kitchen Gluten Free Flour Blend and our amazing Honeyville Freeze Dried Peaches. Alone, these two items create delicious meals, desserts, and snacks that everyone can enjoy. But combine the two and you’ve got a breakfast masterpiece that is not only super healthy and gluten free, but very, very delicious! We found this recipe on the back of our Grandpa’s Kitchen Gluten Free Flour Blend bag and put a little Honeyville twist on it. Add the Peach Cinnamon topping we create with our Honeyville Insta-Whip and you simply won’t be able to resist! Enough talk, it’s Breakfast time!
Ingredients (Waffles):
1/2 cup Honeyville Ova Easy Egg Crystals + 3/4 cup Water (or 4 Eggs)
2 1/2 cups Milk
1/4 cup Coconut Oil
2 1/4 cup Grandpa’s Kitchen Gluten Free Flour Blend
4 tsp Baking Powder
1/2 tsp Baking Soda
1 Tbsp Sugar
1 tsp Cinnamon
1 cup crushed Honeyville Freeze Dried Peaches
(Whipped Topping)
1 cup Honeyville Insta-Whip
1 tsp Powdered Sugar
1 tsp Ultra Gel
1 tsp Cinnamon
1/2 cup crushed Honeyville Freeze Dried Peaches
5 oz Water
Directions:
In a large mixing bowl, combine reconstituted egg powder, milk, and coconut oil and whisk together.
In a separate bowl, add flour blend, baking powder, baking soda, sugar, and cinnamon and mix until completely blended.
Place freeze dried peaches in a resealable bag and crush into a fine powder with a rolling pin.
Add peaches to dry mix and mix until completely combined.
Combine dry and wet ingredients and mix together until a thick batter forms. Bake on a prepared waffle iron. This recipe should give you around 8 waffles.
After waffles are done you can start to make your topping.
In a medium mixing bowl, combine insta whip, powdered sugar, ultra gel, cinnamon, crushed peaches, and water and beat at a high setting until a light, fluffy frosting begins to form.
Pipe frosting on top of waffles, drizzle with your choice of syrup, and serve!
These waffles are just what you’ve been looking for every cool autumn morning. The sweet taste of the peaches, combined with the spice of the cinnamon are the perfect blend for a fall-time breakfast. The waffles are great by themselves, but top it with the whipped frosting and you have a taste that is simply amazing. You never knew gluten free could taste this good!
