Cookie season is officially upon us! Whether it’s the change in the weather, the Holiday celebration, or just a quick snack for when Santa arrives, this seems to be the one time of year when we find ourselves baking all kinds of delicious cookies! But just as with anything else we bake, the perfect cookie deserves the best ingredients.

Let me tell you about our Honeyville Special Pie/Cookie Flour. Just as the title says, it is a special flour, milled specifically for pie and cookie recipes, and it is awesome! Not only has it helped us create delicious, flaky pie crusts with our Mini Pies Recipe, but when used in today’s cookie recipe, it produced a light and fluffy cookie so delicious that we couldn’t help but have seconds! With the Holiday Baking season officially here, it’s time to retire your all purpose flour and give our Special Pie/Cookie flour a try. Believe me, you won’t regret it! Alright, enough talk, let’s get to baking! It’s time to enjoy some amazing Frosted Eggnog Cookies!

Ingredients (Cookies):
2 1/4 cups Honeyville Special Pie/Cookie Flour
1 tsp Baking Powder
1/2 tsp Cinnamon
1 tsp Nutmeg
1 1/4 cups Sugar
3/4 cup Butter, softened
1/2 cup Eggnog
1 tsp Vanilla
2 Egg Yolks

(Eggnog Buttercream Frosting):
3/4 cup Butter, softened
2 1/2 Tbsp Eggnog
2 cups Powdered Sugar
1/4 tsp Nutmeg
1 tsp Vanilla

Yields: 24 frosted cookies

Preheat oven to 300 degrees.

In a medium mixing bowl, add flour, baking powder, cinnamon, and nutmeg, and mix together.

In a large mixing bowl, add sugar and butter, and mix together until completely creamed together.

Add eggnog, vanilla, and egg yokes and mix together until smooth.

Slowly add dry ingredients and mix together util a soft dough begins to form.

Once dough is formed, spoon small dough balls onto a baking sheet lined with parchment paper.

Bake at 300 degrees for 15-20 minutes, or until tops of cookies are lightly brown.

Remove from oven, let cool for 5 minutes, then frost.

To make frosting, add butter, eggnog, powdered sugar, nutmeg, and vanilla together and mix with an electric hand mixer until your have a light frosting. Place frosting in a resealable sandwich bag, cut the end of the bag, and pipe on to the cookies.
