I love apricots! They bring back so many childhood memories. I can still remember the smell of our apricot tree blooming in the backyard. I can still taste the sweet tastes of fully ripened apricots in the summer. Sweet and tangy, there really isn’t anything like them!

One thing I remember most about apricots, growing up, is my mom’s amazing apricot freezer jam! Every year we’d gather all the ripe apricots from our backyard tree and my mom would begin the process of making and jarring fresh jam for the year. Oh how delicious that jam tasted on a slice of toast or with peanut butter! But as good as it tasted, it sure was a process to make!

Not anymore! Using our amazing Freeze Dried Apricots and our versatile Ultra Gel, I’ve created a recipe for Apricot Jam that is quick, easy to make, and full of all the taste and texture we love in Apricot Jam. Best of all, thanks to our Freeze Dried Apricots, you don’t have to wait until summertime to make it! Grab your favorite pot, it’s time to make Freeze Dried Apricot Jam!

2 cups Honeyville Freeze Dried Apricots
2 cups Water
2 lemons, juiced (about 1/2 cup lemon juice)
2 cups Sugar
3/4 cup Ultra Gel

Yields: Three 8 oz Jelly Jars

First, prepare your apricots.


On a sheet of plastic wrap, place your two cups of apricots.


Fold the sheet over and, using a rolling pin, crush the apricots into small pieces.


Pour apricots, water, lemon juice, and sugar into a large pot, and bring to a boil over medium heat.


Once at a boil, remove from heat, add ultra gel, and whisk together until jam begins to thicken and clumps go away. Place back on heat and bring to a boil, whisking as boiling, for 1 minute.


Remove and fill jars with jam. Place lids on top and allow to cool. Can store for 6-12 months in the freezer.


This jam is packed full of flavor, texture, and aroma. The rich smell of apricots will fill your entire kitchen as you make this recipe, and the sweetness of the sugar is just strong enough to give you that delicious taste without overpowering the jam. Slather this up on toast, bagels, sandwiches, or anything else you can think of. Give it away to neighbors and they’ll definitely ask you for the recipe.
