Now lets be honest….aren’t there some days when you just crave a homemade cookie but you don’t have time or the energy to make them?? Let me tell you a secret…it’s something I have done for a while now and it is FABULOUS!! I make up a batch or even two batches of cookies- I bake just one pan, then freeze the rest of the dough for another day. A couple reasons why I do this: 1. If I have homemade cookies in my house I EAT THEM ALL!!! It’s a horrible thing, but I have no self control and I can’t stop!!! 2. I don’t always have time to make cookies, but there are a lot of days that I either want them or need a quick snack (or bribe) for the kids 3. I always have a quick way to make up a batch of “homemade” cookies for a friend in need, for a work pot luck, for a party, etc…. My family is usually a Chocolate Chip kind of family, but today I was craving Oatmeal Chocolate Chip. I hope you enjoy this genius idea as much as I do!
Ingredients:
3/4 cup Brown Sugar
1/2 cup Sugar
1 1/4 cup Butter
2 Tbps. Honeyville Powdered Egg + 4 Tbsp. Water
1 tsp. Vanilla
1 1/2 cup Honeyville All Purpose Flour
1 tsp. Baking Soda
1 tsp. Salt
1 Tbsp. Chef Tess Wise Women of the East Spice
3 cups Honeyville Quick Oats
optional: chocolate chips, raisins, nuts
Directions:
Mix together first 5 ingredients, then add the remaining ingredients and mix well. Make cookie balls, put in freezer bags and freeze until ready to use. When ready to bake- bake at 375 degrees for 8-10 mins.
Then add remaining ingredients. Our family LOVES chocolate chips. I mean so much so, that I catch my hubby eating them by the spoonful for a snack.
