Made with our regular rolled oats, freeze dried bananas, flax seed meal, and organic peanut butter powder, this recipe has everything you love about cookies without all the flour or sugar. Ingredients:
2 cups Honeyville Regular Rolled Oats
1 cup Honeyville Freeze Dried Bananas
3 Tbsp Honeyville Flax Seed Meal
1 tsp Cinnamon
Pinch of Salt
8 tsp Jam
1/2 cup Honeyville Organic Peanut Butter Powder

Yields: 8 cookies

Directions:
Preheat oven to 350 degrees.

Place your oats in your BOSCH Food Processor Attachment and pulse until oats are a coarse meal.

In a small bowl, re-hydrate your bananas by soaking in water until soft, then draining any excess liquid. Once soft, mash bananas with a fork until smooth.

In a large bowl, combine oats, bananas, flax seed meal, cinnamon, and salt, and mix together until a thick dough forms.

Using your hands, take pieces of dough and roll into ping pong shaped balls, then place on your USA Pan Cookie Sheet covered with parchment paper. Press down balls when on sheet and, using your finger, create a well in the middle. Place a tsp of jam in each well.

Bake at 350 degrees for 10-12 minutes. Remove and allow to cool on a cooling rack.

Once cookies are cooled, reconstitute powdered peanut butter by adding 1/4-1/3 cup of water and mixing together. Place in a piping bag and pipe on top of cooled cookies, then serve.
